Ingredients

1 small onion
3Tbsp unsalted butter
1 large yellow bell pepper, diced
3.5 cups sliced yellow summer squash
1 tsp garlic
1.5 cups chicken broth
1 Tbl ground coriander
1 Tbl ground cumin
Salt, pepper, and cayenne to taste
Goat cheese (optional)
Directions
Makes apprx 4 3/4 cup servings.
In a large skillet, cook onion in butter over medium heat until softened. Add bell pepper and cook until softened, about 5 minutes.
Stir in squash, garlic, and other seasonings. Cook, covered, stirring occasionally until squash is tender, about 10 minutes.
Stir in broth and bring mixture to a simmer. Puree the soup in a blender or food processor until smooth. Return soup to a saucepan and simmer until heated through. Thin with water to the desired consistency. Season with salt and pepper.
Garnish with crumbled goat cheese and coriander.
