Ingredients

2 medium sweet potatoes
1 can chickpeas, rinsed
1.5 small yellow onions, chopped
2 cloves garlic, crushed
2 T extra virgin olive oil
1 T brown sugar
1/4 c white whole wheat flour
1/4 c parmesan cheese
spices:
1 t cumin
1 t paprika
1/2 t ground coriander seed
2 t ancho ground chili powder
1/4 t cayenne pepper
Directions
preheat oven to 355 degrees.
1. peel sweet potatoes and chop into thick chunks
2. boil sweet potatoes until tender
3. while sweet potatoes are boiling, add olive oil to frying pan and cook onions until soft. add garlic and cook until onions are translucent. add to medium sized bowl
4. toss drained sweet potatoes in the bowl, add chick peas (you may want to throw these into the food processor to make it easier).
5. add remaining ingredients to bowl. mix with potato smasher or fork tines until mushy consistency.
6. spray baking sheet with cooking spray
7. use 1/3 cup to measure out patties, evenly spaced on baking sheet
bake for 30 minutes or until browned on the outside.
Makes 9 patties (1/3 cup per pattie).
