Introduction
I'm not a big pumpkin fan but this works well and is a great after school protein snack with pita bread, rice crackers (especially salsa flavoured ones) or wholemeal crackers. Ingredients

1 x 410g can or 1-2 cups drained and rinsed chickpeas
1.5 cups cooked pumpkin
2 cloves garlic, crushed
1-2 tsp sesame oil (or 2 Tbsp sesame seeds)
Juice of 2 lemons
pinch cayenne or chilli powder
salt and pepper to taste
Directions
Makes 3-4 cups - 8 servings
Pulse all ingredients together in a food processor adding water or chicken stock to form a smooth, creamy textured dip. Adjust seasonings to taste.
If you prefer your pumpkin warm (as I do), heat for 20 seconds in the microwave before serving.
