Ingredients

1.5 cups Teff
2 cups water
Directions
Made 14 thin-pancake-like flat breads.
To begin starter: mix water and Teff, let set for couple of days until thin and bubbly, mix in a little salt, to taste. Cook only one side on greased griddle until bubbles appear.
Cool and place plastic wrap between pieces of Injera for refrigeration.
My first attempt at this had a green fuzzy layer on top. Not good. Will attempt this again with plastic film over the bowl and watching it, as it may take only hours to ferment here, south of Houston. I've read that Tef has its own symbiotic yeast and that is what allows it to ferment when soaked.
The second attempt was pleasant smelling after 24 hours. And the first nibble was flavorful, stretchy and had a hint of a sourdough but oddly enough also a hint of a milk chocolatey flavor! I am not sure I cooked them correctly however. The bottoms were undercooked I am afraid. Will research this more.
