Ingredients

    3 cups all purpose flour, or all purpose whole grain blend flour
    1/2 cup oat bran
    1/2 cup light brown sugar
    1 Tbsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup chopped pecans or walnuts
    1 1/2 cups plain lowfat or fat free yogurt
    1 1/2 cups mashed overripe bananas (about 3)
    2 large eggs, beaten
    1 stick (8 Tbsp) unsalted butter, melted

Directions

Preheat oven to 375 degrees. Spray a 12 cup muffin pan with nonstick spray. In a large bowl, whisk together the flour, oat bran, baking powder, soda, salt and nuts. In another bowl, whisk together the yogurt, eggs, bananas and melted butter. Pout the wet ingredients into the large bowl with the dry ingredients all at once. Stir together gently only until just blended, about 10-12 strokes.

Fill the cups nearly full. Bake at 375 degrees for 25 to 30 minutes or until golden brown. Makes 12 large muffins.
