Introduction

This is a pretty straight forward simple version of chili. It's very easy to make and quite good. Serve topped with shredded cheddar cheese and warm out-of-the-oven cornbread. Delicious! Ingredients

    16 oz lean ground beef
    1 cup onion, chopped
    2 cloves garlic minced, or 1/2 teaspoon garlic powder
    15 oz can diced tomato (28 oz will work too)
    1 6 oz can tomato paste
    2 cans kidney beans (or about 3 cups cooked beans)
    1 Tbsp chili powder
    1 tsp salt
    1/4 teaspoon pepper
    1 Tbsp dry parsley (optional)

Directions

In a large pot, brown the ground beef. Drain the fat and rinse the meat in hot water. Set aside. In the same pot, cook the onion until tender. Return the meat to the pot. Open up the canned tomatoes and tomato paste. Add their contents to meat and onions. Also add about 2 cups of water for simmering. Add the beans, chili powder, salt and pepper (and parsley if you like). Stir it all up and bring it to a boil. Reduce the heat so that the chili merely simmers, and allow it to cook, covered or not, for about an hour. Serves 6.
