Introduction

I really dislike potato salad with mayonaise, so when I learned how to make this one while in Romania, I was in love! Great, bright, bold flavors without all of the fat. Number of Servings: 16

Ingredients

    6 lg red potatoes

    1 small red pepper, finely diced

    1 small yellow pepper, finely diced

    1 large red onion, finely diced

    1 c. Kalamata or Green Olives, finely diced

    1 c. Spicy kosher Dill Pickles, finely diced

    ¼ c. olive oil

    2 T apple cider vinegar

    ½ t. salt

    1/8 t. pepper



Directions

Boil the potatoes whole, skin on until easily pierced with a fork. Drain, place in ice water to bring to room temperature.

Combine the olive oil, vinegar, salt and pepper. Set aside.

Peel the skins off the potatoes and chop into bite size pieces.

Toss all ingredients together, pour oil/vinegar over the top and mix well.

Chill for at least one hour prior to serving.
Makes approximately 16 1/2c. servings
