Ingredients

Sweet Corn, Fresh, 1 medium ear
Olive Oil, 1 tbsp
Onions, raw, 1 medium - chopped
Tomatoes, 2 medium - chopped
Garlic, minced, 3 tsp
Dried Oregano, ground, 1/2 tbsp
Canned Whole Black Beans, 2 1/2 cup
Trader Joe’s Truly Handmade Whole Wheat Flour Tortillas, 12 tortillas
Mexican Blend Finely Shredded Cheese, 1 1/2 cup
2 Limes
Directions
Cut kernals from corn by running your knife down each side until all kernals are removed. Set aside.
In a large skillet heat olive oil and add chopped onion. Sautee onion until tender.
Add garlic and sautee for a minute or so. Then add chopped tomatoes, oregano, corn and black beans.
Spritz mixture with juice from one lime and warm through allowing the flavors to mix together.
Remove from heat. Spritz with juice of the 2nd lime and mix well.
Heat another skillet on medium, skillet should be large enough to fit one tortilla flat.
When skillet is hot lay one tortilla in the skillet. Top with tortilla with a bit of cheese then add 1/6 of the bean mixture followed by more cheese. Top it off with another tortilla.
Cover and heat through ensuring that it isn't burning. When the bottom tortilla is browned flip over to heat the other side.
Makes 6 quesadilla each consisting of 2 tortillas, 1/4 cup cheese, 1/6 of bean mixture.
Goes well with some lime drizzled avocado! Would also be great with some cilantro mixed in.
