Introduction

This was a staple meal in my childhood. It was hearty, filling, and nutritional. You can leave out the bouillon cube if you want to reduce the sodium since no salt is really used in this recipe. Ingredients

    - Uncle Ben's Whole Grain Brown Rice, less than 1/2 cup
    - onion, 1/2 medium
    - Black Beans (drained), 1 can
    - Diced Tomatoes (no salt added), 1 can
    - tomato sauce (no salt added), 1 small can
    - Knorr Beef flavor Bouillon 1 large cube
    - Kroger Frozen Mixed Vegetables 24 oz.
    - Ground Beef Lean (8% fat) , 16 oz
    - Crushed Red Pepper Flakes, 1/2 tsp
    - McCormick ground cumin, 1/4 tbsp
    - McCormick Salt Free All purpose seasoning, 1/2 tsp
    - water, 1 & 1/2 cup

Directions

dice up onion and cook with ground beef. Add in seasoning (all purpose, cumin, red pepper flakes). Drain grease. Put rice in skillet and add drained meat. Add in bouillon cube and chop up mixing in with meat & rice. Add in tomato sauce, diced tomatoes, and water. cook on medium until rice is soft. Add in frozen mixed veggies. Drain black beans and add to mixture. cook all mixed together until veggies are cooked and not frozen.
Serves 6.
