Ingredients

    2 T Extra Virgin Olive Oil
    1 Whole Chicken Breast, cut into bite-size pieces
    3 T Chili Powder
    1 Green Bell Pepper, chopped
    1 Can Red Kidney Beans
    1/2 Large Tomato, chopped
    1/4 Cup Hot Cherry Peppers, chopped
    2 t Blackened Seasoning
    1 Box Rice-A-Roni Savory Whole Grains Spanish Rice
    A few splashes of Lime Juice

Directions

Cook Rice-A-Roni according to box instructions.
Heat EVOO in a large skillet over medium heat.
Add Chicken and Chili Powder. Stir to coat chicken and cook until outside of chicken is completely white.
Add Green Bell Pepper, Red Kidney Beans, Tomato, and Hot Cherry Peppers. Stir to combine evenly. Add Blackened Seasoning.
Simmer, stirring occasionally, until rice is finished cooking.
Add rice to skillet. Stir to combine.
Add a few splashes of Lime Juice and serve.
Makes 5 servings (approx 1.5 cups each).
