Introduction

Using a Foreman grill, really gets the crunch going on these tasty quesadillas.

This is a double recipe because my kids can't get enough of this, and I cook in batches. You can easily divide this recipe for a smaller family.

This is a double recipe because my kids can't get enough of this, and I cook in batches. You can easily divide this recipe for a smaller family.

Ingredients

    1 lb turkey sausage
    1 lb ground turkey, 93% lean
    1 can black beans, drained and rinsed
    2 pkg taco seasoning mix, 40% less sodium
    1 1/2 C water
    1 1/2 C Kraft Mexican Style 4 cheese, 2% milk

Directions

Cook turkey sausage and ground turkey in a large skillet prepared with cooking spray.

When turkey is thoroughly cooked, drain if necessary. Add black beans, packages of taco seasoning mix and 1 1/2 cup water, allow to simmer approximately 10 minutes.

For quesadillas, use your favorite tortillas (not included in calorie count). I personally prefer Mission Carb Balance, when I can find them. Place about 2 oz of meat mixture on 1/2 of tortilla. Sprinkle 2 tbsp cheese over meat mixture. Fold over tortilla to cover meat mixture.

Place tortilla fold side toward the open side of Foreman. Grill until tortilla shows golden brown stripes.

If you don't have a Foreman, you can use a skillet prepared with cooking spray. Warm the tortilla. Flip it. Add the meat mixture and cheese. Fold over. Cook until side begins to brown. Flip and repeat.

Using a pizza cutter, cut the quesadilla into three triangle pieces.
