Introduction
These mini brownie bites are a hit at potlucks and picnics! You can also warm them up for breakfast as a treat. Top with a dab of ganache and a dollop of whipped cream to make them a little fancier. Ingredients

2 Tbsp natural butter, softened
1/4 cup unsweetened applesauce
1/4 cup sugar
1 egg
1/4 teaspoon vanilla
3 tablespoons unsweetened cocoa
1/3 cup all purpose flour
1 scoop chocolate protein powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2-1 tablespoon water, if necessary
Directions
In a large mixing bowl combine the butter, applesauce and sugar. Mix until the mixture is creamy. Add the eggs and vanilla. Blend again, until the batter is fluffy and soft.
Add the cocoa, protein powder, flour, baking soda and salt. Stir the dough until it is thick and well formed. If the dough is too thick, you may add a spoonful or two of water to soak up the flour. Blend very well after adding the water.
Drop the dough by spoonfuls into greased or paper-lined mini muffin tins . Bake at 350° for about 15 minutes.
*If you like, you could add 1/4 cup of walnuts, white chocolate chips, or both. Chocolate chips can also be added for Double Chocolate Mini's, and a little coconut is good by itself, or in combination with any of the other additions. You can also top with chocolate ganache, frosting or whipped cream.
