Ingredients

grated zest of 1 lemon
3/4 c freshly squeezed lemon juice (4-6 lemons)
1/2 c good olive oil
2 Tbsp minced garlic
1 1/2 Tbsp fresh rosemary leaves minced
1 Tbsp chopped fresh thyme leaves
2 tsp dijon mustard
2 tsp Kosher salt
3 Pork tenderoins (about 1 lb each)
Freshly ground black pepper
Directions
Combine all ingredients in a ziplock and add the pork. Turn to coat, squeeze out the air and marinate for at least 3 hours, preferable overnight.
Heat the grill, brush the grate with olive oil, pull out meat, discard marinate, but leave the herbs that cling to the meat. Sprinkle meat generously with salt and pepper, grill turning a few times to brown on all sides for 15-25 minutes. Meat should register 137 degrees at the thickest part. transfer to a platter and cover tightly with foil. Alow to rest for 10 minutes. The middle will be pink. Serve warm or at room temp with the juices that collect in the platter.
