Ingredients

    3 whole eggs
    5 egg whites
    2 cups shredded zucchini, excess water squeezed out
    1 cup 2% cottage cheese, liquid drained off

Directions

Mix all ingredients and pour into 12 cup muffin pan sprayed with cooking spray. Bake at 350 degrees for 30 minutes, or until set.
