Introduction

I know that traditionally chicken enchiladas are made with green sauce, but I like them better with red, and not super-saucy. I know that traditionally chicken enchiladas are made with green sauce, but I like them better with red, and not super-saucy.
Number of Servings: 20

Ingredients

    1 pound chicken breast, boiled and shredded
    4 oz. fat free cream cheese
    4 oz. neufchatel cheese
    3/4 c. shredded 2% Mexican blend cheese
    1 c. diced green chilies
    1 c. diced green onions
    3 c. red enchilada sauce
    20 extra thin corn tortillas
    3/4 c. shredded 2% Mexican blend cheese

Directions

Mix first six ingredients together. Dip tortillas in enchilada sauce (coat both sides) and fill with about 2 1/2 T. chicken and cheese mixture. Roll up and place in large casserole dish, laying side by side snugly. Drizzle with any remaining sauce and sprinkle with cheese. Cover pan with foil.

Cook for 20-30 minutes at 350 degrees. Makes 20 enchiladas.
