Introduction

I know that traditionally chicken enchiladas are made with green sauce, but I like them better with red, and not super-saucy. I know that traditionally chicken enchiladas are made with green sauce, but I like them better with red, and not super-saucy.

Ingredients

1 pound chicken breast, boiled and shredded
4 oz. fat free cream cheese
    4 oz. neufchatel cheese
    3/4 c. shredded 2% Mexican blend cheese
    1 c. diced green chilies
    1 c. diced green onions
    3 c. red enchilada sauce
    20 extra thin corn tortillas

Cook for 20-30 minutes at 350 degrees. Makes 20 enchiladas.

  • Incredible!
These were very tasty, I liked them a lot. The balance between the ingredients was good, as I prefer the red sauce over the green sauce as well. Thanks for the recipe! - 8/23/10
