Ingredients

4 oz dry whole wheat rotini
1 cup carrot slices
1 cup zucchini slices
2 cup fresh baby spinach leaves
1 cup black beans, rinsed
1 lb. red potatoes, sliced
4 Tbsp olive oil mayonaisse
1 cup Mexican four cheese blend shredded
Seasoned salt to taste (optional)
Directions
Serves 6
Boil rotini in water according to directions on package and then cover bottom of baking pan (9 x 13)
Steam carrots, zucchini, spinach and potato slices together for about 45 minutes until soft.
Pour carrots, zucchini and spinach on top of rotini, add the black beans on top, then arrange potatoes on top of beans. Spread mayonaisse on top of potatoes then sprinkle shredded cheese on top. Broil on low for about 15 minutes until cheese is melted and crunchy brown.
