Introduction

These are yummy fibre-filled cookies, low in fat. They work out as two weight watchers points a piece and they're quite big. Ingredients

    4 tbsp butter
    2/3 cup sugar
    1 large egg
    1/2 cup flour
    1/2 tsp salt
    1/2 tsp baking powder
    1 3/4 cups rolled oats
    scant cup raisins/sultanas
    2 tbsp sesame seeds
    1/2 tsp cinnamon
    1/2 tsp nutmeg

Directions

Pre-heat oven to 180C/350F. Spray cookie sheet with baking spray.

Cream butter and sugar and add egg.

Sift in flour, salt, spices and baking powder. Mix until well combined.

Slowly stir in oats, raisins and sesame seeds. Lay 19 golf-ball size spoonfuls onto cookie tray. they will puff up, but won't expand much horizontally.

Bake for 15 minutes or until golden brown.
