Introduction

I wanted a lighter version of my homemade vegetable soup, something hearty and full of flavor, but light on fat and calories. I exchanged the chuck roast for some chunks of veal and loaded up the veggies. Everyone loved it and it really hit the spot. Ingredients

    Ingredients:

    Butter, salted, 1 tbsp
    Veal, cubed for stew (leg and shoulder), separable lean only, raw, 10 oz

    Brown the veal in the butter in a large soup pot.

    Red Ripe Tomatoes, 8 cup, chopped or sliced

    Dip the tomatoes in simmering water, then into cold, to easily peel them. Use a food processor to make the tomatoes smooth.

    Add:
    Beef Broth, Kitchen Basics - 1 cup, 4 serving (whole box)
    Celery, raw, 1 cup, diced
    Onion - Raw, chopped, .50 cup
    Mixed Vegetables, frozen, 1.5 package (10 oz) (remove)
    Lima beans frozen, fordhook, 1 package (10 oz)
    Cauliflower, plain, 2 cup
    Salt, 2 tbsp or to taste
    Pepper, black, .50 tbsp
    banana pepper, raw 4.5" long, 2, chopped small
    2-4 sprigs of lemon thyme or thyme
    small bunch of fresh parsley

    Simmer for about 2 hours until the veal is very tender and the flavors have combined.

Directions

Makes 12 servings of healthy, satisfying soup for only 128 calories per serving! Enjoy!!
