Introduction

Ingredients

Large pot
1 onion, cut into chunks
2 cloves garlic, crushed
1 tbsp curry powder or paste
1 tbsp turmeric
1 tbsp cumin
1 tbsp garam masala
1 tbsp coriander (dried)
a few tsps Tabasco or chilli sauce
2 tbsps lemon juice
1 tbsp oil
1 cup lentils (or drained from tin)
500mls vegetable stock (or 2 stock cubes dissolved in 500mls water)
1 can diced tomatoes
1 can lite coconut cream or coconut powder
3 potatoes, cubed
300gms silverbeet leaves
Directions
1. Heat oil in large pot and add onions, garlic and spices including the spicy sauce. Fry these together for about a minute.
2. Add all other ingredients and stir. Bring to the boil and then turn down to simmer - about 50-60 minutes.
3. The dahl should reduce into a creamy consistency - keep stirring and simmering until thickened - salt and pepper to taste.
4. Serve with basmati rice and naan bread (extra calories, of course!!)
