Introduction
This is a Hungry Girl Recipe, sans the salt (the original recipe calls for 12 oz of chicken and 1/2 tsp salt, I don't usually add salt to anything, and I don't need 6 oz of chicken on my own). Ingredients
-
1 1/2 Tbsp lime juice
1 tsp cornstarch
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1/8 tsp ground cumin
6 oz raw boneless, skinless chicken breast
1 bell pepper, any color, sliced
1 small zucchini, sliced into thin strips
Half an onion, sliced
Directions
Preheat oven to 375
Combine lime juice and cornstarch in a large bowl and mix until cornstarch dissolves. Stir in all the seasonings to form a thick paste. Add the chicken and veggies and stir to coat. Set aside.
Lay a large piece of heavy duty foil on a baking sheet and spray. Spoon chicken mixture in the center of the foil and spread out. Place another large piece of foil over the mix. Fold together and seal all four edges to form a well sealed packet.
Place baking sheet in the oven and bake 20-25 minutes, until chicken is cooked through and veggies are tender.
Let cool slightly. Suing oven mitts, carefully flip packet over to mix contents and then return to right side up. Cut packet to release steam before opening entirely. Be careful as the steam can burn you.
Serve as desired.
