Number of Servings: 8

Ingredients

    2 cups diced chicken thighs
    2 cups medium grained white rice
    2 cups steamed chopped broccoli
    1 can low fat cream of chicken soup
    1 can low sodium chicken broth
    1 cup low fat cheddar or colby cheese, shredded

Directions

Mix chicken, rice, broccoli, soup and broth (salt and pepper) together in large mixing bowl. Pour into a casserole dish. Put shredded cheddar cheese on top and cook at 350 degrees for 30 minutes. Let sit for 5 minutes before serving. Makes 8 servings.
