Ingredients

    5-6 cups chunked rhubarb, 1 sm package of sugar-free strawberry gelatin mix, 1/2 cup sugar, 1 package of white or yellow cake mix (may use reduced sugar cake mix), 1 cup boiling water, 1 stick of butter (may use 4 Tbsp of unsalted butter and 4 Tbsp of margarine/butter)

Directions

Preheat oven to 350 degrees, in a greased 9 x 13 dish put the rhubarb on the bottom, sprinkle the gelatin mix over, then the sugar, pour the cake mix evenly over the the top. Melt the butter in the water and then pour over the top. Bake for about 60 minutes. May serve with vanilla ice cream or fat cream cool whip if desired.
