Introduction

YUMMY! YUMMY!
Number of Servings: 9

Ingredients

    1 lb. lean ground organic turkey
    1/2 cup chopped onion (or more to taste)
    2 tsp. minced garlic (or more to taste)
    2 cans (8 oz. each) tomato sause
    1 can (4.5 oz) chopped mild green chilis (I used some fresh yellow banana chilis from my garden instead!)
    1 can (15 oz) of organic black beans - drain and rince
    1 sm. can (8.75 oz) of organic whole kernal corn - not drained
    6 - 8" flour tortillas (I used 10" whole wheat ones)
    2 cups (or more) shredded Cheddar cheese (I used 2% pre-packaged 4-cheese Mexican)
    2 tsp. chili powder
    1 tsp. ground cumin
    1/2 tsp. regano leaves
    1/2 tsp. crushed red pepper (optional!)


Directions

USE A BIG!! SKILLET...

Cook turkey, onion, chilis until done.
Add... Tomato sause, beans, corn, and mix up. Add all the spices.
Bring to boil and then simmer low for 5 minutes.

Spray the bottom of a 13X9 baking dish with no-stick spray.

Put 1/3 of the meat mixture in the bottom.
Lay 2-3 tortillas (depending on the size you use) on top.
Put 1/3 of the meat mixture on top of that.
Put 1 cup of shredded cheese
Lay 2-3 tortillas on top.
Put the last 1/3 of the meat mixture...
Put 1 cup of shredded cheese.

I added some chopped green onion and chopped tomato to the top for "looks".

Bake at 350 for 15 minutes or until heated through.

    I didn't use the black beans or the corn, and I added a can of cheddar cheese soup, I used a can of rotel and a can of diced tomatoes instead of the tomato sauce. I also used left over turkey instead of ground turkey. This is a very tasty recipe! - 11/27/10

    This was delicious! I served it with low fat sour cream and organic salsa. Next time I think I will chop up some bell pepper and cook it with the turkey and onions. - 1/10/11
