Ingredients

1 zucchini sliced in half, and middle scooped out
button and portabella mushrooms diced
3/4 cups red onions diced
1 TBSPN EVOO
1 TBSPN Ground Chili Paste
5 TBSPN Parmesan Cheese
pepper to taste
Directions
Preheat oven to 350 degrees
1.) slice zucchini (save shells) and scoop out insides (reserve for later)
2.) dice up onions, mushrooms and zucchini insides
3.) heat 1 TBSPN EVOO in pan and saute diced veggies
4.) Add chili paste, parm. cheese, & pepper
5.) When almost completely cooked scoop into zucchini shells and place into oven until shells are cooked (15-20minutes)
