Ingredients

    28 oz can diced tomatoes with Italian seasoning
    1 med onion, diced
    3 stalks celery, diced
    1 1/2 C carrot shreds
    1/2 head of Cabbage, shredded
    kernels cut from 3 ears of corn
    1 C black beans
    1/2 t chipotle chili seasoning
    1 t red pepper
    1/4 t cayenne
    1/2 t black pepper
    small pinch of celtic sea salt

Directions

Place all ingredients into a soup pot. Bring to a boil and then reduce heat to simmer until cabbage is tender.

    Very Good
    Although very good - I added a few touches of my own - Cubed chicken and some water, chicken broth. It didn't seem to have the consistency I wanted the way your recipe was. My husband says it's a keeper! Thanks alot. C - 9/14/10
