Ingredients

1 red onion
1 white onion
3 garlic cloves
1 tsp. olive oil
1 pkg. mushrooms
1 yellow, orange, or red bell pepper
2 large zucchinis
parmesan cheese
Directions
Chop half of each onion. Saute the onions in a little bit of olive oil over medium heat. Cook for at least 10 minutes, until tender. Add minced garlic and continue to saute over medium heat. Chop the mushroom and bell pepper roughly into bite size pieces. Add to the onions and garlic once they are soft, and stir to combine. While the mushrooms and bell peppers are cooking, chop up your tomatoes. Add the tomatoes to the mixture. The tomatoes will give off a lot of liquid and will bring everything to a nice rolling boil. Saute for 30-40 minutes. It will be done when there is very little liquid and it is stew like. Add salt and pepper to taste.
While the tomatoes are cooking, peel your zucchinis with a vegetable peeler. Add the zucchini "pasta" to a saute pan with a little bit of olive oil, and cook for 4-5 minutes, until just tender and soft.
Serve your zucchini as pasta, top your tomato and mushroom sauce, and finish with some freshly grated parmesan.
