Ingredients

4 tbsp paprika
3 1/2 tsp chili powder
2 tsp onion powder
1 tsp dried thyme leaves
1 tsp dried oregano leaves
1 tsp garlic powder
1 tsp white pepper
1 tsp salt
1 tsp black pepper
1 tsp cayenne
1 lb. (16oz) walleye or pickerel fish
1/4 cup margarine
Directions
Mix first 10 ingredients together. This recipe makes enough seasoning for four medium-sized fillets.
Heat a large skillet over high heat, so it is very hot. Rinse the fillets and pat them dry. Melt the margarine in a saucepan. Brush each fillet with the melted margarine and generously coat each fillet with blackening spice mixture.
Drop fillets into the pan after pouring the remaining margarine into the hot pan. Turn the fillets once and cook until the fish flakes with a fork. Cooking time varies from two to six minutes, depending on the thickness of the fillets.
You can cook the fillets outdoors as the blackening spice may create billows of thick smoke that can fill the house if there is no fan above the stove.
