Ingredients

1 carton Egg Beaters
1 pkg Turkey Bacon
1 C chopped Mushrooms
8 T Green Onions
1 C FF or low fat Cheddar Cheese
6 corn tortillas
6 flour tortillas
Spray glass pan (9x11) with non stick spray, set aside.
Fry up whole package of turkey bacon, drain and chop into small pieces, set aside.
Chop up mushrooms and green onions, set aside.
Grate cheese, set aside.
You will be using a whole carton of egg beaters, whole package of turkey bacon, as many mushooms and green onions as you want....
Making half and half fill flour and corn tortillas with equal parts of mushoom, turkey bacon, and green onions. Sprinkle with cheese, reserving about 1/4 of a cup for the topping. Roll each up and put seam side down snug against each other. Pour carton of egg beaters equally over the top. Cover and chill overnite.
Directions
This is a make ahead recipe. Should sit covered w/ aluminum foil in the frig, overnite before cooking. Remove from frig about 15 minutes before putting in a preheated 350 degree oven. Cook covered about 20 minutes. Uncover and cook another 10 minutes...toothpick inserted in middle should come out clean. Cover with remaining cheese, let it melt, sit a few minutes, cut and eat!
Good topped w/ pico or Pace hot sauce.
