Introduction

Colorful, fresh salad that pairs well with chicken, beef, fish, as a dip, or in a bowl all on its own. Absolutely addictive and easily altered if you want to sub ingredients or tweak it to your own taste. Ingredients

    SALAD:

    1 can black beans, drained and rinsed
    1 can pinto beans, drained and rinsed
    1 package frozen white shoepeg corn, no sauce, cooked
    1 large tomato, diced
    1 medium to large bell pepper, color of your choice, diced
    1 to large medium red onion, diced
    1 jalapeno, diced
    1/2 cup fresh cilantro, chopped
    1/4 cup fresh flat leaf Italian parsley

    DRESSING:

    1/2 cup oil (olive, canola or grapeseed)
    1/2 cup fresh lime juice
    1/4 cup white distilled vinegar (rice or white wine vinegar fine, too)
    1/2 cup Sylvia's Cookin', Dippin', & Moppin' sauce (can sub ketchup)
    4 tsp Light Agave sytrup (can sub organic cane sugar)
    4 tsp chili powder
    2 tsp cumin
    2 cloves garlic, minced
    Kosher Salt and Fresh ground pepper, to taste

Directions

In large bowl, combine beans, corn, tomato, peppers, onion, cilantro and parsley.

To make dressing, in a seperate bowl whisk together all dressing ingredients (except the salt and pepper; use this at the end to your taste). Pour dressing mixture over salad then stir to combine all ingredients evenly. Chill at least 1 hour before serving.

NOTE: the dressing components can be altered to however you like it. I usually add more spices like ground chipotle powder and smoked paprika to mine. This is equally delicious over meat as it is on its own. Enjoy!
