Introduction

This is amazing when made with fresh, local tomatoes. Mmm! This is amazing when made with fresh, local tomatoes. Mmm!

Ingredients

    2.5 cups black beans
    1 cup finely diced cherry tomatoes (I use small heritage tomatoes)
    2 tbsp finely chopped cilantro
    .5 oz fresh lime juice
    .5 oz orange peach mango juice
    .5 tbsp apple cider vinegar

Directions

Gently mix all ingredients together in a medium sized bowl. Cover and let sit in the fridge for about an hour for the flavours to mingle. Makes 4 side-dish-sized servings.
