Introduction

Great use for left over shrimp. If smoother bisque is desired, use a stick blender to mix soups, milk, tomatoes, and red wine vinegar prior to added chopped shrimp. Great use for left over shrimp. Ingredients

    Shrimp, cooked, 12 oz (chopped)
    Diced Tomatoes & Green Chilies (Rotel), 1 can (2.5 servings)
    Condensed tomato soup, 1 can (10.75 oz)
    98%FF cream mushroom soup (1 can)
    Skim Milk, 8 oz
    Red Wine Vinegar, 2 tbsp.
    White pepper to taste

Directions

Combine soups, diced tomatoes, milk, red wine vinegar,and chopped cooked shrimp in a medium saucepan. Heat on low 5-10 minutes, stirring often. Taste and add white pepper to taste, and depending on brand of tomato soup you may want to add a bit more red wine vinegar - some soups taste very sweet so a bit more tart helps balance the bisque.

Top with croutons and diced chives if desired (not calculated in calorie total)

Makes 6, 1-cup servings.
