Introduction

This is a sweet curry that children will like. You can use any vegetables or fruit. I used leftover BBQ chicken or you can use fresh chicken breasts. It's even quicker with pre-cooked rice. Ingredients

    2 cups cooked chicken chopped
    1 small onion chopped
    2 cups zucchini diced
    4 canned peach halves (low calorie) diced
    1 1/2 oz box (40 grams) raisins or sultanas
    1 cup diced cooked or frozen carrots
    14 oz (400 gram) can of diced tomatoes
    1 small banana diced
    2 tblspn fruit chutney (I used mango)
    I garlic clove minced
    2 tsp curry powder
    1 tblspn Splenda
    1/2 cup water
    1/2 cup brown rice

Directions

Cook rice and set aside.
Saute onion, garlic, zucchini and carrot until soft, add curry powder and cook until aromatic. Add tomatoes, chutney and raisins (sultanas) and simmer for 5 minutes, add peaches, water, Splenda and banana and cook for a further 5 minutes. Add cooked chopped chicken and cook for 5 minutes until heated through.
Serve with brown rice.
