Ingredients

    4-1/2 oz skinless chicken breast
    2 tsp oil
    1 tsp minced garlic
    5 oz fresh spinach
    1-1/4c pasta sauce
    2 oz linguine pasta

    (I use Ancient Harvest quinoa linguine and Whole Foods roasted veggie pasta sauce.)

    39.8% carbs, 30.9% protein, 29.3% fat

Directions

Cook pasta until tender, about 8 to 10 minutes. Clean and trim chicken of visible fat. Slice into thin strips or cubes. Microwave-steam the spinach for 4 minutes (I do half at a time for 2 minutes) and drain off liquid. In a non-stick pan, sautee the garlic in oil until it starts to brown. Add chicken and cook for 10 minutes or until no longer pink. Stir in the pasta sauce, pasta, and spinach, and simmer for 7 to 10 minutes.
