Introduction

I found a recipe for a lowfat breakfast quiche but improvised on it making it veggitarian without the turkey bacon and regular cheese..Instead I use veggie bacon and soy cheese...Its very good.. Ingredients

    1 medium white onion
    1 cup egg subsitute
    1 cup skim milk or lactaid skim milk
    1/2 cup whole wheat flour
    8 slices morning star veggie bacon
    1/2 cup veggie slices cheddar soy cheese
    2 oz baby spinach
    1/2 tsp baking powder
    1/2 tsp crushed red pepper or to taste
    1/2 tsp garlic powder
    1/2 tsp onion powder
    sea salt, black pepper, to taste

Directions

Makes 6 servings
Preheat oven to 400
Place veggie bacon on tray and cook for about 5 minutes...checking to make sure it is not overdone
Chop up medium onion and saute until translucent
Add the spinach until wilted then take off the heat
Mix together egg subsitute, skim milk, whole wheat flour, and baking powder
After veggie bacon is cooked chop up and add veggie bacon, spinach, and onion to egg mixture
Add onion and garlic powder
Add crushed red pepper, sea salt, and black pepper to taste
Place in sprayed 8 in pan
cook for 15- 20 minutes depending on strength of oven..
It is cooked when knife inserted in the middle comes out clean....
THEN EAT AND ENJOY!!
