Ingredients

    1 large whole tomato
    1 oz Goat Cheese, Soft
    1 medium pepper, sweet, red, fresh,
    1 tsp. black pepper
    1/4 c. Kraft Parmesan Cheese
    3 tbsp butter, salted
    1/2 Avocado
    6 c. White Rice, long grain
    1 c. Peas, frozen
    1/4 c. Sweet Corn, Fresh
    2 tsp Salt
    1/2 c. Water

Directions

Cook rice in enough water to cover until tender, about 20 minutes. Chop carrots into small peices, chop red pepper and tomatoes. Cook carrots in 1/2 c water until tender, about 5 minutes. Add red pepper, tomatoes, peas and corn. Cook until hot. When rice is done cooking, drain, mix in butter, and salt, pepper and parmesan cheese. Drain veggies and mix into the rice. Arrange in a casserole dish, sprinkle with goat cheese and avocado, and cover. Keep covered in the oven until ready to serve. This make 16 small, 1/3 c servings.
