Ingredients

    2 eggs
    0.5 cup splenda or sucralose (24 tsps)
    1 tsp vanilla
    1- 8oz package fat free cream cheese
    16 keebler reduced fat vanilla wafers (crushed in ziploc bag)


Directions

preheat oven to 350
line 24 mini muffin tin with mini muffin cup holders
crush vanilla wafers and line bottom of cups with crumbs
mix remaining ingrediants until creamy and spoon into cups
bake at 350 about 20-25 minutes or until set

    Incredible!
    I tried this one with egg beaters instead of eggs. It was excellent, only 22.5 calories each. I took them to a get together with some friends and they all loved them. I think a dab of pie filling on top would be great too and make them look beautiful. - 10/8/10

    I make these and they are wonderful. I leave the vanilla wafer whole and it sticks together a little better. Use liquid eggs if want. - 9/1/10
