Introduction

Ingredients

    2 C shredded cheddar cheese
    4 C romaine lettuce, shredded
    1-16 oz. package frozen corn, thawed
    2 bell peppers, chopped (1 1/2-2 C)
    1 jalapeno pepper, chopped after seeds removed
    1/2 C thinly sliced red onion (or sweet vidalia)
    1/2 C reduced fat mayonnaise such as Hellman's Light
    1/4 C fresh cilantro or parsley, chopped
    1 can black beans
    salt and pepper to taste
    3 C corn chips, such as fritos

Directions

In a large bowl, mix the cheese, lettuce, corn, peppers, jalapeno, onion, beans, mayo and cilantro. Season with salt and pepper. Just before serving, top with corn chips.

Makes 4 servings.

To reduce calories, fat and carbohydrates, serve without corn chips.
