Ingredients

2 cups whole wheat penne (nutritional value done with dry penne)
1 tablespoon plus 1 teaspoon olive oil
1 garlic clove, minced
4 cups baby spinach
3 cups diced tomatoes, divided
1 tablespoon dried oregano
3/4 cup lowfat shredded cheddar cheese, divided
*nutritional value calculated with canned no salt added diced tomatoes
Directions
Preheat oven to 350 degrees
Cook pasta until al dente (12 mins), drain and set aside
Heat 1 tablespoon of olive oil in skillet over medium heat. Add minced garlic clove and stir until fragrant. Then add 4 cups of baby spinach and 2 cups diced tomatoes. Cook for about 4 mins (until spinach wilts)
In a medium bowl, combine remaining 1 cup of diced tomatoes and oregano and stir well. Add 1/2 cup cheese. Then add pasta and spinach. Mix well together
Grease bottom of baking dish with remaining 1 teaspoon oil. Pour pasta into dish and bake for 15 mins. Remove from oven, add remaining 1/4 cup cheese and bake another 4 mins. Let stand for 5 mins
