Introduction

A fresh and crunchy salad. A fresh and crunchy salad.
Number of Servings: 6

Ingredients

    5 cups Jicama, peeled and diced
    2 large oranges, peeled and segments halved
    2 green sweet peppers (the long thin green ones)
    2 Tbsp lime juice
    2 Tsp brown sugar
    1 Tbsp extra virgin olive oil
    1 Tbsp ginger paste or grated ginger

Directions

Peel and dice the jicama.
Peel the oranges and break into segments, then cut them in half.
Thinly slice the peppers.
Put these into a lager bowl
In a small bowl beat the dressing ingedients together.
Pour the dressing over and mix well.
Chill for at least 30 minutes.

Number of servings = 6 (1 1/2 cups per serving)

Weight watchers points = 1 per serving

    Made this to keep on hand for quick lunches this week. Very yummy. My oranges weren't too good so I might try mandarin oranges next time. - 1/4/11
