Ingredients

    1 can tuna (in water) drained
    1/4 c carrots, shredded
    1/4 c celery, diced
    1 T onion, minced (called for red)
    1 T light mayonnaise
    2 tsp dijon mustard
    1 tsp red wine vinegar
    salt & pepper to taste
    2 slices reduced calorie whole grain or wheat bread
    2 slices Kraft 2% cheese singles (could use fat free to lower the calories)
    2 slices tomato
    I Can't Believe It's Not Butter Spray

Directions

Combine tuna, celery, carrots, onion, mayo, mustard, vinegar, salt & pepper.

Heat skillet over high heat. Spray butter spray (about 10 sprays) and place the two slices of bread into skillet. Top bread with tuna salad, cheese and tomato. Turn heat down to low, cover and cook til cheese melts and bread is toasty.

Serve immediately.
