Introduction

I was browsing through recipes on Spark and took the parts that I liked from different recipes to come up with this on my own! I used what I had available but I would have loved to use more tomatoes if I had them! Ingredients

    1 chicken boullion cube
    3/4 cup water
    2t olive oil
    1t minced garlic
    1/2cup diced onion
    1/2 cup garbanzos (chickpeas)
    1/2 cup whole wheat couscous (dry)
    1/3 cup cherry tomatoes (halved)
    1/4 cup reduced fat feta cheese

Directions

Boil water and dissolve boullion cube in it.

Heat oil in small saucepan over medium heat. Add garlic and onion and sauté until garlic is fragrant and onion is beginning to brown and become translucent.

Add garbanzos and heat for a few more minutes. Add couscous and prepared chicken boullion. Bring back to boil, cover and remove from heat. Allow to sit for 5 minutes for couscous to absorb liquid.

Fluff couscous and stir in the cheese and tomatoes. Serve as is or season to taste with salt and pepper (not included in nutritionals).
