Ingredients

    1 lb boneless, skinless, chicken breast, cut into 1/4 in strips
    1 cup broccoli
    1 cup cauliflower
    1 can cream of chicken soup
    1/2 cup mayonnaise
    1/2 cup cheddar cheese
    1 tsp lemon juice
    1 tsp curry powder
    1/4 tsp cayenne powder
    1/2 cup French's fried onions
    4 cups cooked rice

Directions

Place chicken in a greased 8x8 baking dish. Top with vegetables. Mix next 6 ingredients together, spoon over chicken and vegetables. Top with onions. Bake at 375 degrees for 30 minutes. Serve with rice.

Serves 8 (1/2 cup rice, cooked)
