Introduction

This is my official recipe for homemade Larabars. These have more stuff in them, including oatmeal for more fiber. These have no added sugar or salt. If you made them with raw peanuts, I believe you could call these a "raw" food bar. But don't be scared! These are very tasty and a great snack. This is my official recipe for homemade Larabars. Ingredients

    1 cup of Instant Oatmeal
    1 bag of Dried Mixed Berries (Cherries, Cranberries & Blueberries)
    1 bag mixed Dried Fruit (Apple, Peaches, Plums, Apricots & Pears)
    10 oz of Hadley Pitted Deglet Noor Dates.
    2 cups Dry Roasted Peanuts, no salt added.
    3 tbsp of Nestle Toll House 100% Cocoa
    1/2 cup Unsweetened Coconut
    2 pkgs of Ziyad Baking Dates

Directions

Best to use a strong food processor to do this recipe.
Put 2 cups peanuts & 3 tbsp of Cocoa in food processor. Grind peanuts, oatmeal and cocoa. Place mix in a bowl, set to the side. Place dried mixed berries in processor and chop. Place in bowl with peanuts and cocoa. Place mixed dried fruit in processor and chop. Place in bowl. Do the same with the pitted dates.

Add 1/2 cup of unsweetened coconut to bowl and with your hands, mix all the ingredients together. Once it is completely mixed (some of the dry ingredients will not be completely mixed).

Put 2 packages of baking dates into bowl and mix into other ingredients. Should resemble a log at this point.

Spay a 13x9 pan with cooking spray and place log in pan and press down until it covers the entire pan evenly.

Cover and place in refrigerator overnight. Cut into 26 pieces.

Makes 26 - approximately 62 g bars.
