    1 Tsp. olive oil
    3 cloves garlic, chopped
    1/2. c. sweet onion, chopped
    10 baby carrots, chopped
    1 tsp. thyme
    3 c. water
    4 cubes chicken bouillon
    3 c. fresh broccoli chopped, florets and stems
    1 c. evaporated nonfat milk
    1/2 c. shredded sharp cheddar


Heat oil in saucepan. Add carrots and onion. Saute' until tender over medium high. Add garlic and thyme, saute' additional 2 minutes over medium heat.
Add water, bouillon and evaporated milk. Cook 5 minutes, add broccoli. Cover and cook over medium low for about 20 minutes or until the broccoli is tender.
Stir in shredded cheddar. Blend well until cheese is melted and completely incorporated.
You can use an immersion blender for a creamier soup.
Serve hot. Goes great with multigrain rolls
