Ingredients

    2 cups flour
    1/2 cup unsweetened cocoa
    3/4 cup sugar
    1 tsp baking powder
    1 tsp baking soda
    1 cup mashed bananas
    1 1/4 cup milk
    2 large egg whites
    1 1/2 Tablespoons oil
    1 1/2 teaspoons vanilla

Directions

Mix all ingredients, do not over-mix. Spray the cupcake papers before filling. Bake for 22 minutes at 350 degrees. Makes 24 cupcakes.

Frosting is optional. These would be great dusted with powdered sugar or with a dollop of whipped cream on top. You can also drop a few chocolate chips on top before you bake them.

    I modified this recipe with the following substitutions: whole wheat flour, Splenda, soy milk, unsweetened applesauce. This significantly lowers the calories and bad carbohydrates in your recipe while adding fiber and vitamin c.
