Ingredients

    ~2.5 lbs. chuck roast
    2 large potatoes
    3-4 large carrots
    4 cups low-sodium beef broth

Directions

Trim the fat from the chuck roast. Slice potatoes and carrots

Add beef, potatoes, and carrots to a crock pot. Cover with 4 cups of beef broth, and mix well together. If there is not enough broth to cover all the ingredients, you can add a little water.

Allow pot roast to cook for 8-10 hours on a low setting. Once the roast is cooked, add 1/3 cup of flour to the pot and stir.

Makes 3 large servings

    Incredible!
    I just made this yesterday for supper... it was a huge hit! So yummy and tender. After we all ate I cut up the roast and added some corn to the gravy mix, potatoes and carrots so we could have stew for supper the next day! I will definately make this again! - 11/21/08
