Ingredients

    16 oz Super Firm High Protein Tofu
    1/4 cup Ponzu Vinegar (not the soy mixture)
    6 Tbsp pistachios (about 45 grams)
    1 tbsp corn starch
    4 tbsp Light Mayo
    cooking spray

Directions

Cut tofu into 4 planks. Press between paper towels to dry. Pour ponzu into a shallow dish and add tofu. Marinate for 15 minutes, turning halfway through.

Pulse nuts and corn starch in a food processor until finely ground; do not let it become a paste. Place nut mixture into another shallow bowl.

Heat a nonstick skillet or cast iron griddle over medium heat. Coat with cooking spray if desired.

Remove tofu from marinade and place onto paper towels. Whisk mayonnaise into ponzu. Dredge each piece of tofu first in the ponzu mayo then in the nut mixture. Add tofu to griddle and cook until golden and heated through, about 3 minutes per side. Serve with remaining ponzu mayonnaise.
