Ingredients

    2/3 cup canola oil
    2 2/3 cup Splenda
    4 large eggs
    2 cup cooked, mashed pumpkin
    2/3 cup water
    3 1/3 cup whole wheat flour
    2 tsp baking soda
    1/2 tsp baking powder
    1 1/2 tsp salt
    1 tsp cinnamon
    1 tsp cloves
    2/3 cup chopped walnuts, optional (included in calorie count)
    2/3 cup raisins, optional ( not included in calorie count)

Directions

1. Mix oil and Splenda
2. Add eggs, pumpkin, and water
3. Blend in dry ingredients
4. Stir in nuts and/or raisins
5. Pour into 3, bottoms greased, loaf pans
6. Bake in 350 F oven for about 70 minutes or until done

Makes 3 (10 serving) loaves
