2 red ripe tomatoes
1 cucumber
2 avocados
1/2 c scallions
1 tbsp cilantro
3 tbsp olive oil
3 tbsp balsamic vinegar
Directions
Buy cooked shrimp to make this easy. Cut up vegetables to a good size. Mix all ingredients. Shake it up. Keep refrigerated. Enjoy!
