Ingredients

2 bananas, large, peeled and mashed
2/3 cup low-fat buttermilk
1/2 cup lightly packed brown sugar
1/2 cup Crisco Vegetable Shortening
1 egg
1 1/2 cup whole wheat flour
1 1/2 cup unbleached white flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup walnuts, coarsley chopped
Directions
Preheat oven to 350 degrees. Lightly spray a 9"x5" loaf pan and dust with flour. Stir mashed bananas and buttermilk together. Set Aside.
Sift together flours, baking powder, baking soda, and salt. Set aside.
In s seperate mixing bowl, cream shortening and sugar together until light and fluffy. Add egg and beat well.
Alternately add flour mixture and buttermilk mixture, to the shortening mix. Beginning and ending with flour, completely stirring in each addition before adding more.
Stir in vanilla extract and walnuts.
Pour into prepared loaf pan.
Bake for 60 minutes or until toothpick inserted in center comes out clean.
Makes 18 - 1/2 slice servings
